Dessert Burger Cupcake Sliders



After walking by some of these cute little guys in the store the other day, I decided they'd make the perfect dessert for our Memorial Day Cookout!

Here's what you need:
White or Yellow cake mix = Buns
Brownie mix = Patties
Fondant = Cheese
Colored Icing = Lettuce, Tomoato, and Mustard
White Sprinkles = Sesame Seeds

Make white/yellow cake mix according to box. And pour into cupcake pans - make 2 dozen. I use my USA nonstick cupcake pans (These are the best pans ever!) Bake according to box or until a toothpick comes out clean. Take cupcakes out and let them cool for at least 20 minutes and cup in half horizontally.

Prepare brownie mix according to the box. Bake preferrably in a 10 x 14 pan so that the brownie patties are thin. (I baked mine in a 9 x 13 pan and they were on the thick side.) After the brownies are done cooking, let them cool for 30 minutes. Once brownies are cooled, cut "patties" with a round cookie cutter or with the rim of a cup to a size similar (just a bit bigger) of the cupcakes.

Next, mix up your icing - I use my very own secret buttercream frosting recipe. Divide Icing into three separate mixing bowls. Put yellow food coloring in one, red in another, and green in the last one. Mix and keep adding food coloring until desired color. (I used food color paste, except that I was out of red, so I used red dye and cocoa powder.)



On the bottom half of the cupcake (the bottom bun) squeeze green icing in a circular motion using a rose tip, so that the "lettuce" is visible on the outside.


Lay the brownie "patty" on top of the icing

Next comes the "cheese"! I have never used fondant before, but decided to try my luck at making it, and not only was it easy, it turned out great! Get the recipe here. 


Roll the fondant between 2 peices of wax paper and put in fridge just for a bit. Then take off the top wax paper and cut it into 2" x  2" squares. Peel the squares off the wax paper and place ontop of the brownie.


Next, use a round tip with red icing starting in the center, going in a circle to make a "tomato". Some people use it as ketchup, but since I can't stand ketchup...  I did a tomato.


Then using another smaller round tip, drizzle the yellow icing "mustard" around the top of it.


Add the top cupcake "bun" and the white sprinkles "sesame seeds".
